Bircher Muesli (Creamy Overnight Oats)

Our version of Bircher muesli, a typically minimalist mixture of soaked oats mixed with apple, sweetened milk, lemon juice, and nuts, is more luxe than the original. Protein-packed rolled oats are soaked in a mixture of milk and yogurt for tang and creaminess, plus plenty of dried fruit for sweetness and flavor. As long as you stick to the ratio of one part oats to two parts liquid, it’s highly customizable: Toast the oats for nutty depth; use your favorite dried fruit blend; or choose dairy-free milk and yogurt to make it vegan.

Instructions

Prevent your screen from going dark as you follow along.
  1. For added flavor, toast the oats: Place the oats in a medium skillet, set over medium heat, and cook, stirring frequently to prevent burning, until the oats are fragrant and a shade darker, 3 to 5 minutes. Immediately transfer the oats to a medium bowl or large storage container to stop the cooking.

  2. Add the remaining muesli ingredients to the oats and stir to thoroughly combine.

  3. Cover and refrigerate for at least 6 hours and up to 1 week.

  4. To serve, top with fresh fruit, toasted nuts, and a drizzle of milk or maple syrup as desired.
