Hi Colin, it sounds like you may have cooked your boiled cider a bit longer than necessary, which is causing it to thicken up a bit too much when chilled. While the boiled cider may be okay for a limited time at room temperature, we highly recommend refrigeration for longest shelf life. You may find heating it up briefly in the microwave helpful to make your boiled cider more pourable straight from the fridge.
