Hi Karen, No-knead bread makes dough that is really quite slack, and for the gruyere-stuffed bread you need a bit of strength in the dough to help the loaves hold their shape. However, if you're looking to add some cheese to this no-knead dough however, you certainly can. Check out our blog post for making No-Knead Bread Three Ways.
