Hey there, Xenia! The paraffin wax is likely just to make the chocolate coating shiny without tempering the chocolate, it should be just fine to skip this ingredient. You can freeze dipped chocolates and candies but this can bring the chocolate out of temper and cause them to sweat a bit while defrosting, affecting their appearance.
