Easy Banana Bread made with All-Purpose Baking Mix

The banana bread is moist, tender, and full of banana flavor – it’s sure to be an everyday favorite in many kitchens. Instructions

Prevent your screen from going dark as you follow along.
  1. Preheat the oven to 350°F with a rack in the center position. Lightly grease a 9" x 5" loaf pan

  2. In a large bowl, stir together the mashed bananas, sugar, oil, milk, vanilla, and eggs.  

  3. Add the baking mix, nuts, chocolate chips, and cinnamon and mix until combined.  

  4. Transfer the batter to the prepared pan and smooth the top.  

  5. Bake the banana bread for 50 to 55 minutes, until it feels set on top and a thin knife inserted into the center comes out clean or with just a few moist crumbs (but no wet batter). If the banana bread appears to be browning too quickly, tent it with aluminum foil for the final 10 to 15 minutes of baking. 

  6. Remove the banana bread from the oven. Let it cool in the pan for 10 minutes, then loosen the edges and turn it out of the pan onto a rack to cool completely. Cut into slices and serve slightly warm or at room temperature. 

  7. Store leftover banana bread, tightly wrapped, at room temperature for up to 4 days or in the refrigerator for up to 10 days; freeze for longer storage.
