Hi Carol, I think it would work to increase the recipe a bit. Since the diameter of the Dutch oven is the pertinent comparison point, if your 6.75-quart Dutch oven is around 10" in diameter, this recipe should work fine as it is. However, if your Dutch oven has a diameter of 12" instead, you could figure out the multiplication factor by dividing the base area of the 12" pot (3.14 X 6 X 6 = 113) by the area of the 10" pot (3.14 X 5 X 5 = 78.5). 113 divided by 78.5 = approximately 1.44. If you multiply the weight of each ingredient by that factor, this will give you the increased recipe. Baking times should be about the same for the larger recipe, so check at the time recommended, and then reset the timer as necessary.
