Great article! I am often confused about the many people in the sourdough camp that seem to think that cooling the bread means 12 hours to over night. I feel you have lost the best part of eating fresh bread to let it sit that long. I do let mine cool properly, but that certainly doesn’t take more than 1-2 hours. I have been baking sourdough for over 35 years and never saw the harm of cutting into a couple hour cooled loaf.
