Hi Dawn, Devon may not see your questions, but I'm happy to respond to both! First, the scraper does come with the Ankarsrum. Second, when she says she's found she needs to adjust her recipes to a higher hydration, that means she needs to add more liquid to her recipes when she makes them in her Ankarsrum. I'm not sure this is always the case, but Devon has found this to be true when she makes her recipes using the Ankarsrum.
