However, I suspect that our Oatmeal-Date Smashed Cookies recipe might be okay, since it bakes for 13-16 minutes at 375°F, and then returns to the turned off oven for another 4-5 minutes. It might be helpful to check the internal temperature of the cookies after the first round of smashing. From what I've been able to read, 165°F should be a safe internal temperature, although heat treating the flour and using pasteurized eggs might also be helpful.
