I'll keep to weighing each ingredient in bowls, so not to forget to add one.

When I make bread, I weigh the rising bowl, add the dough and then again after the rise.
And then divide by how many loaves or rolls you're baking and weigh each chunk of dough.

I do the same for cakes, I weigh the KA mixer bowl and again after the batter is complete.
And then divide by how many pans you're baking, put each pan on the scale and add the batter up to the weight needed.
