Does anything change if the cake has vegetables in it? IE: Carrot cake, Chocolate Zucchini cake

Or if you have substituted applesauce for oil/butter?

I've alway put that in the fridge, but I noticed the fresh fruit line allows for 1-2 days on the counter...
