I found pea protein milk to be the best substitute for soured milk as it thickens very well with acid. Plain non-dairy yogurt is another excellent alternative to buttermilk. It can be thinned with a bit of milk if needed.
There are non-dairy heavy cream and half and half products available too. No need to worry about imparting the coconut flavor from canned coconut products with these.
