Water baths are great, but I had problems with leaky springform pans. This might be a well-known solution but I felt very proud of myself when I thought of fitting a shower cap around the pan before putting it in the water bath — and it WORKED! I chose a non-toxic cap and ran it through the dishwasher before using it the first time.
