Good question, Vivian! This technique really shines in that it allows you to develop doughs that would be too wet to stretch or fold by hand. While it doesn't quite develop the gluten in as thorough and organized of a manner, it does provide a clear way to handle doughs that would normally be otherwise unmanageable.
