Hi Jim. You can substitute the Golden Wheat for a traditional Whole Wheat flour. Both are 100% whole wheat flours...the only difference you may see is that breads made with the Golden Wheat are slightly lighter in color and more mild in flavor since the Golden Wheat is milled from a White Wheat varietal (compared to the Red Wheat used for the traditional Whole Wheat).
