Hi Rita, the Golden Wheat flour and regular Whole Wheat flour are basically interchangeable in baking, although we've found the Golden Wheat soaks up just a little less liquid, as compared to the darker wheat flour. As far as substituting for Unbleached All-Purpose flour, there is no set ratio, but we do have a wonderful blog post that can help you navigate substitution decisions in a variety of different types of baked goods.
