Hi Jaqueline, I think as long as you thicken up your raspberry rhubarb jam a bit, this should work fine. Keep in mind that it works best to add the Instant ClearJel to the fruit by mixing it with some sugar first (otherwise it is likely to clump). Our Pie Thickener Chart may come in handy when determining how much Instant ClearJel to add.
