Hi Deirdre, Instant ClearJel is made from modified food starch, which is derived from corn. While it does not include any animal products, it is not a certified vegan product. We don't generally recommend this ingredient as an egg-replacer, however we do have some great suggestions for other egg substitutes in baking.
