Hi Sandy! You got it...the loaves were taken straight from the fridge, scored and then baked. You can bake directly from the fridge so long as your loaves have properly risen. If they are not quite there, you can let them rest at room temperature for an hour or two (or however long they need) to continue rising before scoring and baking.
