Great question Jean! I've used quite a few different things over the years depending on where I was assembling the cake but an upside down sheet pan wrapped in foil or a heavy duty wrapping paper is my favorite. I've also used also used three or four sheets of cardboard taped together and wrapped in foil, a sturdy sheet of plexiglass, and once even a tray table that mother uses for breakfast in bed! Just be sure to wrap porous items in foil, plastic wrap, or wrapping paper to keep the frosting from seeping into anything. Best of luck!
