When I first started making sourdough bread, I used purified water. When the water system quit, I began using our well water. The starter seemed to explode with happiness. Much better results.
A diabetic friend measured her blood glucose before and after eating my sourdough bread. There was no change! She had always found a change in glucose levels with purchased sourdough bread.
