Thank you for this article! I started sourdough baking in 2017 when I retired. Made my own starter per KA instructions, and have used mostly KA recipes. Although I have tried at least a
dozen of your sourdough recipes, our go-to every day bread is your Sourdough Sandwich Bread. We have rarely purchased a loaf of bread since. And since I have access to honey, when I wanted to try to use it in place of the sugar, the KA baking experts provided me with straightforward conversions for the honey and water that I can use for any recipe that I want to substitute honey for sugar. So thank you for your expertise, clear communication, and commitment to simplicity and ease.
Since first making my starter, I have found other sourdough groups on social media and internet blogs. Almost all of the authors/ bakers seem to delight in making sourdough baking as difficult and complicated as possible. No wonder so many newbies are confused and dare I say anxious, about sourdough. In the groups I belong to, I can't count how many times I have referred new bakers who are looking for guidance to your blogs and recipes. Now I have yet another excellent article to refer other bakers to. Let's continue to take the mystery out of sourdough baking!
