Hi Myca, you'd want to use the same procedure as outlined here, freezing the dough in the size ball you would want to form into large calzones or stombolis, and then thawing out overnight in the fridge before proceeding with the recipe. If you're making individual calzones, I would wait to divide the dough until after freezing and thawing.
