I learned a quicker way to defrost pizza dough from the book The Pizza Bible by Tony Gemignani. His approach is to take the frozen pizza dough, out of the plastic, and drop it into 80 degree water for 15 minutes. They'll be thawed about a quarter of the way through and still solid in the center. Put on a sheet pan, cover with plastic wrap and let them sit at room temp for 1 and a half to 2 hours until thawed the whole way through. It works!
