Hi Malinda, you can generally substitute our 00-Pizza flour for AP flour in a pizza recipe. although you will likely get slightly different results. The two flours have similar protein percentages: AP flour (11.7%) and 00-Pizza flour (11.5%), which means the pizza flour will absorb just a little less liquid and develop slightly less gluten than the higher protein AP flour. You can substitute equal parts by cups or by weight, but may find it helpful to either hold back a little water or drizzle in a touch more flour when substituting the 00-Pizza flour.
