I have only used one starter that I learned from one of the older Better Homes & Gardens cookbooks. Mix together 1 cup flour, 1 cup water, 1 tablespoon sugar and one packet yeast. Cover your container (I use a 2 quart canning jar) with muslin cloth and sit in a warm spot in your kitchen until it starts bubbling. Stir well and refrigerated for ten days. Stir well, add one cup each flour and water, then discard 2 cups of the starter. (You can use this discard in baking but the first discard won't have much flavor.) Leave out overnight in a warm place, then stir well and refrigerated for ten days. Repeat. Use as much as you want, when you want but always feed your starter before you measure it out and NEVER let your starter get below 1 cup. Hope this helps.
