Hi Kellie, if you're happy with the results you're getting with the cold start method, then I wouldn't feel compelled to bake your bread a different way. As far as baking with two sheet pans, I can't envision a way that you would be able to trap the moisture given off by the bread as successfully as using a steel or pizza stone and an inverted pot.
