Interesting article. Do you have experience when one is making a pizza from storebought dough? With that, I always feel unsure about what stage in the proving the dough is, and I've found the only successful way to stretch the dough is to press it slightly into a round but then place it over the back of both of my hands and allow gravity to do its magic. I continue to rotate the dough around, hanging over the knuckles on the back of my hand until it has evenlly stretched out. Thoughts on this?
