Hi Lucy, because self-rising flour already includes salt, you generally don't have to add additional salt to the recipe, so it does have that going for it. As far as substituting some of the flour with pastry flour or AP flour, it will likely depend on the recipe, but I think in general it should work. Keep in mind that AP flour will soak up a bit more liquid than self-rising flour, so you may need to add a touch more liquid to the recipe.
