Days? About two weeks until they reach fully black skins. I remove the fruit, mash or blend them, put the pulp in a freezer bag, and freeze 8-24 hours. I also use jaggery, the unrefined sugar used in India & surrounding countries, instead of brown or white sugars, for a more complex, not so sweet flavor. Be sure the jaggery you buy has no other ingredients!
