My kitchen is also rather cool so I started putting a pint jar of water in my microwave, heating it to just below boil, and then pushing it to a back corner. Then I put my container of dough into the microwave to proof. (do not turn on the microwave!) This method has cut 1/2 the time of proofing off my dough prep. Works every time! Oh, if the jar won't sit flat in the corner, make a pad of folded paper towel to give it a flat place to stand while proofing the dough.
