I have used this method for years, and it works beautifully for me. When the bread machine beeps, I turn my microwave/convection oven on and set it to 200°. I also turn on my regular oven to 375°. I shape my dough on parchment paper, oil it, put everything in the bread pan, and by that time the convection oven is beeping. I turn it off, put the bread pan in, and set a timer for 26 minutes. Once in a while, I have to give it a bit more time, but 26 minutes is generally perfect, and allows my oven to preheat without wasting gas. I then bake it in the big oven for 36 minutes. I have never had it kill the yeast, or start cooking the crust. I have tried several different spots, and this is the simplest and best method for me. I have my mother’s old bread pans, and all of a sudden, my loaves would not slide out, no matter how I prepped the pan. Centering the shaped dough on the parchment and properly arranging it in the pan is somewhat of a pain, but it beats cutting it out of the pan with a table knife every time.
