Like the previous commenters, we proof our bread in a warmed oven. One note, though... if you're going to do that, find a way to indicate to others that bread is proofing and the oven should not be turned on. My husband bakes more bread and I bake more sweets and more than once I've preheated the oven to bake and then discovered the bowl of dough! Now we have a sticky note over the oven controls if bread is proofing. ๐
