If you have heat registers(vents) above your kitchen cabinets or on the ceilings and also have space on top of the cabinets to put dough containers, I’ve found that to be the best place to proof dough while the heat is on in my house. Mine are always comfortably at 78-80 degrees (we keep our thermostat at 72) and this works especially well for naturally leavened doughs. It’s also a great, cozy spot for sprouting seeds.
