I put my overnight no knead dough in the oven with the oven light turned on. The next morning when I took the Pyrex bowl out I had a wet mass of slime. I also have a cold kitchen. I am 88 and still bake . My dough bowl is the large yellow Pyrex my Mother used. I also use King Arthur flour.
