You may also want to gently press the dough balls onto the parchment-lined cookie sheet so they adhere to their spot and aren't likely to move. There's no need to flatten them significantly; you just want to encourage them to stick a bit. It also sounds like excessive spreading might also have been at play here, so if you haven't already done so, next time I would be sure to use our Bread Flour and to give the dough balls at least 24 hours of refrigeration before baking.
