For best results replace the bread flour with an equal amount of King Arthur Gluten-Free Bread Flour. For the best overall texture, press down the scooped cookie dough with your fingers until they’re about 3" in diameter. Bake the cookies for an additional 2 to 4 minutes (about 20 to 26 minutes total) to ensure they’re baked through. However, if you only have our Measure for Measure flour, you can use an equal amount of Measure for Measure in place of the bread flour. The resulting cookies won’t be as lofty (they’ll spread a bit more) and the texture won’t be quite as smooth/melt-in-your mouth. (If you find them slightly gritty, let them rest overnight and it will dissipate.)
