Hi JoAnn! We have tried making these delicious cookies gluten free and recommend to replace the bread flour with an equal amount of King Arthur Gluten-Free Bread Flour. You'll want to bake the cookies for an additional 2 to 4 minutes to ensure they are baked through. You could also use an equal amount of the Measure for Measure in a pinch, however, the cookies won't be as lofty and the texture not as melt-in-your-mouth. Happy Baking!
