About the correct amount of egg --the simplest.wsy to achieve the amount of egg in a recipe is the measure the eggs as you crack them into a measuring cup. Today's recipes are made for one egg equalling 1/4 cup. Keep cracking eggs until you have the specified amount, i.e. three quarters cup for three eggs. This also allows you to use smaller or bigger eggs because you're measuring them. I have been been doing this the last 30 years and it's so easy to have the exact amount of egg called for.
