Suggest two small edits to fix awkward wordings in this post. One, the back of the chocolate wafer is flat, not convex (and not concave, either). The top (rounded) side of the wafer is convex. Two, a knife's "tang" and "blade" are not the same thing. Gripping a knife close to the bolster, or using a pinch grip (aka blade grip), may be what the poster means.
