Great article. I've been using an off set serrated bread knife for some years and it really works for chocolate-chopping. Thank you, P.J. Hammel, for the validation of my practice. My question now is: what knife/implement DOES work for chopping those mammoth Trader Joe's chocolate solid bars? I haven't found one yet that avoids flying shards. Thanks!
