Very informative article. All flour is not equal. Bleached, unbleached, presifted, bromated, etc. READ THE LABEL!!! Use the product. See how it reacts to your ingredients. When you find one that gives you the best results, stay with it. For me it is King Arthur Unbleached across the board best results for my baking.
