Hi Roseanna, yes, bread flour should work fine in Cowboy Cookies, although the cookies may not spread quite as much. Be sure to measure your flour carefully. We recommend either weighing your flour (our bread flour weights the same as our unbleached all-purpose flour), or using this method to measure your flour by cups.
