Our White Whole Wheat flour is milled from organic white winter wheat in Kansas that is neither ancient nor landrace grain. The Climate Blend Flour is milled from 3 types of wheat which have been carefully created for us by the Bread Lab in Washington State, then grown in Montana and North Dakota. These are not considered ancient nor landrace varieties of wheat, but we encourage you to take a look into the important work the Bread Lab is doing to create new types of wheat that put nutrition and sustainability at the forefront.
