I have noticed that KAF Whole Wheat Flour alone makes a nice yeast bread, but KAF White Whole Wheat flour doesn't. I attribute this to the higher protein content of the first. This result might just be me, other people have different results. So will you be testing each batch for protein content and putting that on the label?
