While the exact ratio of the blend of wheat types in this flour is proprietary, we can assure you that the inclusion of perennial wheat is a significant step in our goals to shift to regenerative farming practices. This specific type of perennial wheat was developed by our partners at the Bread Lab, and grown by farmers in North Dakota and Montana.
