Hi Katherine, because we’re using an innovative mix of new regeneratively grown varietals, we’re still learning what protein levels we should expect from these new grains. Unlike a traditional King Arthur Flour, we do not have a protein percentage associated with Climate Blend. We test each new blend of flour to ensure it meets King Arthur’s standards, so you can feel confident knowing each bag of Climate Blend you buy will work in your whole wheat recipes.
