My SD starter certainly doubles in less than 6-8 hours. By the 6-8 hour mark, certainly by the 8 hour mark, it has actually started to shrink. Is this something I should be concerned about? Is my starter too weak? I keep my starter in the fridge between feedings and typically put it back in the fridge after it's doubled. I feed my starter once a week. I use the discard as is for recipes calling for discard or feed it for recipes requiring fed starter to make my baking project, as I only keep a small amount of starter during feedings.
