I try to weigh all ingredients when possible. I find that the ingredients that recipe developers use are not consistent with one another. They use different brands and the weights they call out are not the same for the same volume if listed in grams as well. Like one cup of KA AP flour is 120 grams and that's great if your using KA AP flour (I do), but if your using a differet brand or the recipe developer is using somethig other than KA flour their weight measurement given might not be the same. I've seen weights of a cup of flour vary amoung recipes. That will definately throw off your end result.
