Hi Mary, we have another blog post about how to make your own pumpkin purée. Since you may not want to reduce the pumpkin for every baking project, you could do this as needed. The blog post I linked above also includes instructions for how to drain off excess liquid (so your purée thickens closer to the canned consistency), but that doesn't mean you couldn't further reduce it later, if you choose to do so.
